Born from the cherished memories of Sellia Georges, a third-generation restaurateur from Chicago, MIA’s was inspired by the warm hospitality of her Greek grandmother and the unforgettable tastes of her childhood summers spent in Greece.

In the heart of Oia village in Santorini, Sellia discovered the perfect setting for her dream: an elegant Cycladic home with panoramic views of the caldera. There, she created MIA’s, a restaurant designed for those who expect more—more depth, more warmth, more authenticity.

From its humble beginnings in 2021, MIA’s was a family affair, founded by Sellia and her father, Chris Georges, who shared her vision and brought decades of experience and heart to the project. Since then, the MIA’s team has grown into a passionate collective, each member dedicated to crafting a truly holistic and indulgent dining experience, every single day.
